50 million peso investment Xel-Ha opens Commissariat during 14th anniversary, receives “H Distinctive”
Posted by: dvillacis in Awards and acknowledgements, News featureTo celebrate its 14th anniversary, Xel-Ha natural park, among Cancun-Riviera Maya’s most important tourist attractions, passed its audit with a 100% qualification, thus obtaining the H Distinctive certification in its food and beverage consumption centres, including the Commissariat, a building constructed by DarKitectos for Xel-Ha Park between 2007 and 2008, with an investment totalling over 50 million pesos.
The Commissariat is a building complex that increases the efficiency of provision supply, storage, preparation, and service of food and beverages to Xel-Ha’s restaurants and bars. This construction was undertaken in adherence to the strict functionality, security, and hygiene regulations, making it one Mexico’s most modern and efficient facilities of its kind, with a production capacity of at least 20,000 servings per turn, daily.
The facilities were audited by Laura Calixto, on behalf of the Health Secretariat, who performed a detailed inspection throughout the new facilities, including freezing chambers for seafood, fowl, and red meats, defrosting chambers, refrigeration chambers for fruits and vegetables, freezing chambers for cakes and ice-cream, rotissier and saucier stations, garde-manger station, warehouse, a chamber for bottles and other containers, and a warehouse for chemical substances. The inspection included interviews with employees concerning the manner of procedure, both in the Commissariat and at the consumption centres. Also worth mentioning is the fact that the audit included the employee dining hall, whose brand new facilities are integrated into the Commissariat building, and that feed over 500 of Xel-Ha’s collaborators on a daily basis.
The H Distinctive is an acknowledgement granted by the Tourism Secretariat, likewise ratified by the Secretary of Health, to fixed establishments that serve food and beverages and adhere to the Hygiene and Quality standards marked by Mexican Norm NMX-F-605-2004. These standards are meant to convey trust and confidence to tourist operators, reassuring their clients are being attended to with strict quality criteria.
Criteria analised by the audit are: food reception, storage, chemical substance management, refrigeration and freezing, kitchen area, food preparation, service areas, water and ice, sanitary services for employees, garbage management, pest control, personnel, and bars.
On November 16th, 1994, Xel-Ha opened its doors, operating under a concept of sustainable tourism, and a staff totalling 7 collaborators. It is currently one of Mexico’s leading companies in sustainable recreational tourism, with an annual visitation of 750,000 people, and numerous awards acknowledging its fair use of natural resources.

I have visited Xel-ha in the past, (at least 4 or 5 times) and it seems to get better each time I return, and it has always been beautiful from the first time! I am sure to return , this year, I hope!!
